Ingredients

  • 1 pound ground beef
  • ½ cup chopped yellow onion
  • 2 tablespoons taco seasoning
  • 3 cups white rice cooked
  • 1 15 oz can of black beans
  • 2 cups corn
  • 2 cups shredded cheddar cheese
  • 1 cup salsa
  • 1 jalapeño sliced
  • 2 tablespoons chopped cilantro

Instructions

  • First, cook your rice according to the package instructions.
  • While the rice is cooking, add the ground beef and onion to a skillet. Cook over medium heat for 7-10 minutes or until the juices run clear.
  • Add the taco seasoning to the beef. Mix for 1 minute or until combined. 
  • Place the cooked rice in a bowl. 
  • Assemble the taco bowls. Add the beef and the remainder of the ingredients to the bowl. Serve and enjoy!

Notes

You can keep the unassembled ingredients in the fridge for up to 5 days. These bowls are great for meal prep since you can prepare each component and store it separately until you are ready to assemble and enjoy!
