Ingredients

  • 2 peaches diced
  • 1 mango diced
  • 1 tomato diced
  • ½ red onion or 1 small red onion, finely diced
  • 1 bell pepper any color, diced
  • 1 jalapeno pepper diced, use habanero for extra spice
  • a few sprigs of fresh cilantro chopped
  • 2 limes juiced
  • 1 teaspoon coarse kosher salt if using table salt, start with less and add more to taste

Instructions

  • Prep the ingredients by dicing them into small, bite-sized pieces. I leave the skin on the peaches because I like the texture, but you can peel them with a vegetable peeler if you prefer. When prepping the jalapeño, slice in half and use a spoon to scoop out the seeds and white pith before cutting into small cubes.
  • Add all of the ingredients into a mixing bowl. Mix well and serve!

Notes

Store in an airtight container in the fridge for up to 2 days. It’s best fresh, as the fruit softens and releases more juice over time. Stir well before serving leftovers.
