Ingredients
2peachesdiced
1mangodiced
1tomatodiced
½red onionor 1 small red onion, finely diced
1bell pepperany color, diced
1jalapeno pepperdiced, use habanero for extra spice
a few sprigs of fresh cilantrochopped
2limesjuiced
1teaspooncoarse kosher saltif using table salt, start with less and add more to taste
Instructions
Prep the ingredients by dicing them into small, bite-sized pieces. I leave the skin on the peaches because I like the texture, but you can peel them with a vegetable peeler if you prefer. When prepping the jalapeño, slice in half and use a spoon to scoop out the seeds and white pith before cutting into small cubes.
Add all of the ingredients into a mixing bowl. Mix well and serve!
Notes
Store in an airtight container in the fridge for up to 2 days. It’s best fresh, as the fruit softens and releases more juice over time. Stir well before serving leftovers.
